Eggplant and Sausage Penne
Delicious and hearty sauce over penne or other shaped pasta

- 1 tin Missing Link's Rockin' Morroccan Full Monty Sausage
- 1 eggplant finely diced
- 1/2 cup red wine
- 2 - 3 cloves garlic peeled and minced
- 1.5 - 2 cups chicken broth
- 700 gr Canned whole tomatoes crushed by hand
- olive oil
- salt
- Penne or another heaty pasta
Saute egggplant and garlic in olive oil until eggplant is soft. Remove it to a plate.
In the same pan, cook the sausage.
Add the wine and scrape up and brown bits on the bottom of the pan.
Reduce the liquid.
Add broth and tomatoes. Return eggplant and mix and salt to taste.
Simmer up to 1 hour until the liquid has reduced and sauce has thickened.
Serve over penne or any other hearty pasta.
